hhhmmm hhmmm pumpkin pie....

I'm not sure really what made us do it... but pumpkin pie came calling our names after a day of overcast and misty rain. that evening this is what our kitchen looked like.

So I went to the grocery store in hunt of pumpkin and the rest of the ingredients.... hubby and son made the pie... how awesome is that that!!!!!!

2 pies
--------
2- 15oz cans pumpkin
1 3/4 cup sugar
1 tsp cinnamon
1 tsp ginger
1 tsp allspice
1/2 tsp cloves
1/2 tsp nutmeg
4 eggs
1 can evaporated milk
1 cup regular milk

Open cans and scoop pumpkin into large bowl. Using wire whisk add sugar and mix thoroughly. Add all 5 spices and stir until well blended. Add eggs and mix well. Pour in half of the evaporated milk and stir carefully as it can be splashy. Add the rest, again stirring slowly. Do the same with the regular milk. Set aside and make the dough.

2 pies....

1/2 cup water
1/2 cup canola oil
1/4 cup wheat germ
1 3/4 to 2cups of flour...

Measure out first three ingredients and put in medium bowl. Add the 1 cup of flour and stir well. If dough does not form a ball around wooden spoon as you stir add a tablespoon at a time until it does. Then finish mixing using your hands and squishing the dough. Divide into four equal parts and roll out a section at a time in a circle. Carefully peel off counter and lay in pie plate. Edges can be left rough, fluted or any design you choose. (patch any areas at the bottom that might be thin).

Bake at: 425 for 15 mins and then
350 for 45-60 mins.... Enjoy!
